Ingredients:  Makes 12 servings (12 cups)

1/2  lb.

Directions:

Boil potatoes for 45 minutes with the skin on. Rinse and allow to cool for about an hour.

Boil eggs and allow to cool.

Cook bacon to crispy and remove excess grease by patting with paper towels.

Chop potatoes into bite-sized pieces.

Peel and chop eggs into small diced pieces and combine in a large bowl with the potatoes and mayonaise.

Dice the green onions (about 1 bunch) and stir into the salad.

Add salt and pepper to taste.

Crumble the bacon over the top of the salad. Chill for 45 minutes to an hour and serve.
