Coat a grill or rack in a broiler pan with cooking spray. Preheat the grill or broiler.

Cut the peel and whited pith from the oranges. Holding the oranges over a medium bowl to catch the juice, cut between the membranes to release the segments, allowing them to drop into the bowl. Squeeze the membranes to release any juices into the bowl. Add the olives (about 1 1/3 cups), onion and pepper to bowl. Toss to combine.

Rub the smoked paprika onto both sides of the chops. Grill or broil, turning once, for 6 to 10 minutes or until temperature inserted in the center of a chop registers 155 degrees. Serve the chops topped with the orange mixture.
