Ingredients:  Makes 4 servings (4 each)

Directions:  
Heat olive oil untill hot but not smoking. Add chopped onions and cook till golden, add minced garlic and cook a minute more. Drain tomatoes keeping juice and chop finely. Add tomatoes, juice, water, sugar and salt. Simmer for 30 minutes to thicken. Remove from heat and add basil. Serve
add zucchini, eggplant, mushrooms to sauce before simmering to make a vegetable medley.
