Description: Fresh tomatoes, spinach, herbs and parmesan cheese with shrimp and pasta for an easy summer dinner.

Directions:

Bring large pot of lightly salted water to a boil. Add the pasta, and cook for 8 min. or per package instructions.

Saute till almost golden, minced garlic, chopped onion and oregano in 3 tbs. olive oil

Chop and mix in tomatoes, basil and salt and pepper to taste and simmer for five minutes while pasta is cooking

When pasta is almost done, stir in shrimp and cook until heated through. Toss with pasta in a large serving bowl and sprinkle with grated parmesan cheese
