Directions:
Heat pan with Olive Oil over med heat
Cut Chicken breasts into 6 pieces lengthwise or use the already cut up chicken tenders
Mix 1 egg in a shallow dish with fork
Put the Breading mix in a second shallow dish and add salt, pepper and garlic herb and mix together.
Dip chicken pieces in egg and then in breading mix, till each piece is done.
When oil is hot enough,( it should sizzle) put chicken pieces in and fry on each side ( approx 3 min each side or till golden brown)
After the first side is browned and turned over, put a lid on the pan for a min or two, before turning over again, this helps the chicken to cook faster and the steam in the pan keeps the chicken moist.
serve with ranch dressing
Make sure to add the salt, pepper and herbs or it will be bland
