Chop all veggies. Beat eggs and egg whites with a whisk until well beaten. Add mustard and beat again. Mix in all veggies. Pour into a pie plate sprayed with olive oil spray. Cook in a 350 degree oven for 20 minutes. Add cheese to the top and bake 10 minutes to melt cheese.
