Directions:  
Chop all vegetables as instructed, including the fresh jalapeno. Be sure to scrub your hands thoroughly with hot water and soap after handling those jalapenos.

Heat one half of the oil over medium-hot fire in large frying pan til it spreads over the whole bottom of the pan. Add the pork and allow meat to brown slightly on all sides. Stir and/or toss as needed. Insides will still be pink.

If needed, add the remaining oil. Add the onion, jalapeno and potato and continue to cook until onion begins to become translucent. Add the garlic and stir for a few seconds, then add the salsa and the water. Contents in pan will sizzle some. You may want a splash guard. Reduce heat, add the cilantro. Simmer for ten to fifteen minutes or until meat is cooked but not tough. Remove from heat.

Shouldn't really need any salt. There's tons of sodium in the salsa.
