Directions:

Crack eggs, scrambling only one whole egg and one egg white

dice 1/4 cup of red peppers

slice 1 green onion

spray pan well with Pam cooking spray

empty eggs into pan

a few minutes later add cheese strips to middle of egg mixture

layer omelet filling (ie. pepper and onion mixture) on top of cheese

gently fold sides of omelet over omelet filling

let omelet cook a minute or so more in the pan then turn off the burner and let it cook the rest of the way in the pan.

if unsure of whether the omelet is cooked all the way let it cook a bit more in the pan or pop it in the microwave for 30 seconds.
