Heat oil in large skillet and sauté onions and garlic for 5 minutes.

Crumble ground turkey and cook until no longer pink—about 5-8 minutes.

Add zucchini, mushrooms, and herbs. Cook for 3-4 minutes.

Add canned tomatoes and tomato sauce. Simmer for 5 minutes.

Boil lasagna noodles

Spoon one-third of the sauce in the bottom of an 9 x 7 baking dish.

Lay 4 lasagna noodles on top.

Repeat until sauce and noodles are used. Sprinkle reduced-fat cheese on top.

Bake for 20 minutes, then broil for 2 minutes, until top is golden.
