Description: With turkey leftovers, we boil the carcass for 20-minutes, cool, de-bone the left-over meat then toss the bones and "ucky" stuff, dice the meat, add two potatoes, a cup of carrots, a stalk of celery, an onion, additional chicken broth and simmer for 30 minutes; then add dried noodles.

Directions:  
Boil turkey carcass in 1 gal of water and bring to boil. Cover and let simmer for 30 minutes. Remove carcass from broth, set aside, and let cool. Peel potatoes, carrots, and onion. Dice and add to simmering broth, along with commercial chicken broth, and season to taste. With cooled turkey, de-skin and de-bone meat, dice to smaller-sized pieces then add to soup pot. Bring back to rolling boil and add package of noodles. After the pot comes back to boil, reduce heat, and simmer for another 30 minutes. You should have about 16 one-cup servings. If soup is too thick, either add more broth, water, or enjoy as-is. My grandmother made this every time that she cooked a whole turkey and it was quite popular with family members through the years.
