Prepare rice mix, use 1 tbs. oil

In small bowl, whisk t tbs. oil, red onion, lemon juice and garlic

Lightly spray grill pan, set to medium heat

Pound chicken to 1/2 thick

Sprinkle chicken with oregano, salt and pepper

Grill, about 2 minutes per side

Transfer rice to large bowl, stir in dressing

Spoon rice onto plates, top with chicken and sprinkle with cheese
