Spread butter on one side of both slices of toast. (That will be the outside of your sand which will be fried.)

Lay 1 slice of bread butter side down on pan, then place cheese on non buttered side, then place next bread slice butter side up. Cheese will hold pcs together... Flip when bottom slice has browned.
