Marinate the chicken in oil and seasonings of your choice for about one hour.

Dice chicken into small pieces. Place a cast-iron skillet on the heated grill over medium heat. Add about 1 T. oil and cook the chicken until done.

Add the fajita seasoning and cook for about another 5 minutes. Take the chicken out of the skillet and set aside.

Place some chips in the skillet to cover the bottom of the pan. Put about 1/4 of the rest of the ingredients over the top, including the chicken.

Cook for a few minutes until cheese has melted. Then add the rest of the chips, and the remaining ingredients. Cook until the cheese has melted.
