Directions:  
ONE: Heat a large nonstick saute pan over medium-high heat. Add oil, meat, garlic and onion and cook for 5 to 8 minutes, breaking up meat with a spoon while cooking, until no liquid remains and meat is browned. Add chile powder, mustard and cayenne, stir well and continue to cook for 1 more minute. Pour mixture into a bowl and set aside.

TWO: Return pan to heat and add bell pepper, zucchini and eggplant, stir and saute for 3 to 4 minutes. Add meat mixture back to pan, stir well and reduce heat to medium. Cook for an additional 10 to 12 minutes, stirring often, or until all vegetables are tender and cooked throughout.

THREE: Add tomato/marinara sauce, 2 tbsp water and Sucanat or honey to pan, stirring until meat and vegetables are coated. Cook until sauce is hot and bubbling. Season with salt and black pepper. To serve, sandwich 3/4 cup of mixture between each bun
