Description: Use 1 serving of perpared mac & cheese, less fat, add saute'd onions, peppers, and boca crumbler ( or ham or turkey sausage as variety).
Ingredients:  Makes 1 serving (1 each)

Prepare the lighter Mac & cheese recipe.

Meanwhile, saute the onion, pepper and mushroom in no cal cooking spray.
Add the Boca crumbles ( or other protein meat) and spinach. Cook until spinich starts to wilt.

Add the broth and cheese wedge. Cook and stir until all the cheese is melted, and broth cooks down to a thin gravy consistancy.

Add 1 serving of the prepared lighter Mac & cheese.

Mix everything together and put in microwave save bowl.
6 ) Microwave for 1-2 minutes until hot and bubbly.
ºnote: can top with bread crumbs and parmesan cheese if desired.
