Homemade Chicken Fajitas

1  lb.		boneless, skinless chicken breasts
1/2  cup		green bell pepper
1  cup		red bell pepper
10  pieces		yellow bell pepper
1		small yellow onion
1/2  teaspoon		Cayenne pepper, garlic powder, onion powder, chili power, white pepper, chipotle powder
1		flour tortilla
1/2  ounce		shredded medium cheddar cheese
2  ounces		fresh pico de gallo
1/2  cup		sliced avacado

Mix all spices into a dry rub. Put chicken in a plastic bag with the rub, then add a small amount of olive oil or beer, just enough to get the rub to cover the chicken. Let sit for 15 minutes.

Cut your peppers and onions into thin strips, then coat with remaining rub and toss in a skillet with a small amount of olive oil; sautee until done, peppers should be crispy.

Grill your chicken until done, then slice.

Layer on tortilla with cheese, pico de gallo, and avocado
