Cook Chicken Breast in Fry Pan with Pam Spray, Cool and dice into 1" pieces
In 3 or 4 Qt. Pan, put in Onions, Celery, Carrots, and Chicken
Add the Chicken Broth. Bring to a boil, then to a simmer. Simmer for 45 min.
While soup is simmering cook you noodles for 10 to 12 min. Drain
After soup has simmered, add the frozen spinach,(make sure the sprinach is thawed and squeeze the mositure out of it, before you use): and peas. Add Salt and Pepper to taste and add the fresh thyme and basil. Bring back to a boil and simmer for another 15 min.
Add noodles and stir well.
Serves 8
