Homemade Chicken Soup with Rice

10  cups		fresh chicken stock
1  cup		diced carrots
1  cup		diced celery
1-1/2		diced boiled chicken breasts
1  cup		brown rice
1  teaspoon		salt and pepper to tase
1/2  cup		White Onion - Chopped

Boil 1 small chicken (3 -4 ) lbs. in enough water to cover the bird, with one sliced onion and a handful of peppercorns for 30 minutes.

Remove chicken and set aside to cool.
Strain broth, removing onion and peppercorns.
Use 10 cups of the broth in a separate pot.
Add cup of rice and bring to a boil. Lower heat and let simmer for 30 minutes.
Remove breast meat from chicken and dice
Add vegetables and chicken to pot and bring to a boil.
Reduce heat and simmer for 1 hour.
