1
In food processor or blender, chop almonds until they are small bits. Do not turn to powder, almonds tend to become butter like if you get them too hot and powdery.
2
Remove almonds into a mixing bowl and add cranberries to blender. Blend until they are a little pulpy.
3
Put cranberries into mixing bowl with almonds and drizzle aprox. 3 tbs of honey over mixture. Fold the honey into the mix until cranberries and almonds are well coated and can form balls. If you want gooier bars, add more honey. If you cannot coat all the dry materials, add a bit more honey (tiny bits) until you can coat everything.
4
Take out some plastic wrap and roll your "batter" into four even balls, wrapping each in its own little plastic pocket.
5
This is a fun part, once you have them wrapped individually, you can shape them. Shape them into squares, leave them as balls, make a star.
6
Put your bars into the fridge to cool for about four hours, or over night so you can grab one in the morning. The honey cools and hardens making a great on the go bar!
