Directions:

Chop potato into 1cm cubes. Place in water in a saucepan and bring to the boil. Add a pinch of salt and simmer for 15 mins until cooked. Drain in colander.

In a non stick fry pan over med-high heat add 2 tbs oil and when hot add mustard seeds until they start to pop. Add garlic, ginger, curry poser and turmeric. Cook for 30 secs.

Add butter to fry pan and remainder of oil. When hot add potato and fry for 5 mins until golden brown.

Finely slice spring onion and add to potato. Keep warm in oven.

Fry 4 eggs. Divide potato between 4 bowls and top with egg. Serve.
