Prepare corn bread according to package

Let bread cool - cube 3/4 of the loaf (3 servings)

Preheat oven to 350 degrees

Thaw frozen spinach - remove excess water

Saute veggies in butter, when mixture begins to brown - add chicken broth

Cool veggie & stock mixture in fridge (or freezer)

In same pan, brown sausage & drain excess grease

When veggies are cool, add lightly beaten egg.

Then combine spinach, sausage, veggies & corn bread cubes - mixing until texture becomes light bread pudding

bake for 20-30 mins - internal temp s/b 160-180 degrees.
