In a large skillet, saute the onion, green pepper and celery. Cook, stirring occasionally until the vegetables are soft, approximately 5 minutes. Add the sausage and the chicken. Stir until browned. Pour the entire mixture into a slow cooker. Stir in the tomatoes, bay leaves, chicken broth, boullion cube w/water, hot sauce, Italian seasoning, cayenne pepper, salt and pepper . Cover and cook on Low for 7 hours or High for approx 3 hours. Stir in the shrimp, cover and cook just until the shrimp is heated through, about 20 minutes. Discard the bay leaves and serve over cooked rice.
