Directions:  
In a small pan, saute with 1 TBpn light butter, the chopped onions, green peppers and ham until onions are lightly browned. In a small bowl, whip egg with 1 TBSPn of skim milk. Heat omlet pan with remaining light butter.
Add egg mix to pan, allowing edges to set. Sprinkle with shredded cheese, leaving a little for finishing garnish. Add veggies and ham mix as the cheese begins to melt. Fold the omlet together and light brown the sides. Remove and serve, garnish with remianing cheese while warm from the pan.
