Ingredients:  Makes 4 servings (4 scoops)
1  cup
1/4  cup
6  tablespoons
1/2  cup
1  teaspoon
1  pinch

Whisk allulose and water together to form a smooth slurry over low heat
Turn heat up to medium and whisk for 3-4 minutes until bubbles start to form (if crystals start to form on the edge of the pan, swirl the liquid around a bit)
Use a candy thermometer to get to 330F (at 300 it will look like an amber beer)
Turn off the heat at 330 and add 6 Tbsp of salted butter in pieces
Whisk all the butter in - add 1 tsp on vanilla extract and whisk some more
Remove from heat - add 1/2 cup of heavy cream and whisk until smooth
Allow to cool before storing
