Description: A very easy and delicious soup. It seems a bit unhealthy with the pepperoni so you may substitute with turkey pepperoni although I haven't tried it.
Ingredients:  Makes 4 servings (4 cups)

14-1/2  ounces
 
3  teaspoons
 
1  quart
 
2  tablespoons
 
3  ounces

Directions:

In a large soup pot, heat olive oil and add rinsed, uncooked lentils. Stir lentils on med-high for approximately three minutes.

While lentils are cooking, cut pepperoni into thick slices and cut into quarters.

Throw everything, besides elbow pasta, into the pot. Cook for one hour on med-low heat.

After an hour, throw in elbow pasta. Cook for an additional 10 minutes.
