Cake Directions

Beat egg whites and tartar until stiff peaks form

mix egg yolks, 4 tsp of stevia, 12 Tbsp cream, water, spices and carrot until stevia dissolves.

Gently fold in egg yolk mixture, and other ingredients.

Pour into a well buttered and paper lined loaf pan.

Bake in preheated oven for 30-35 minutes until cake is firm to touch and slightly leaves pan sides.
Frosting Directions

Whip the remaining Tbsp of cream until stiff.

In a separate bowll, beat the cream cheese until very smooth, then beat in 12 tsp of Stevia and vanilla.

Turn the mixer to its lowest speed and blend in the whipped cream
4
Wait until cake is completely cooled and frost
