Split open muffins and toast lightly. Spread with mustard then top with ham and onions. Allow 1 slice of onion per side of muffin. Top onions with tomatoes and broil for 5 or 6 minutes, or until tomatoes begin to soften. Remove from oven and add cheese. Return to broiler and cook until cheese mets & bubbles. Serve with crudities and dip.
