Heat oil in Dutch Oven over medium heat. Add onion, diced celery and leaves, diced carrots, garlic, and thyme. Cover and cook, stirring occasionally, until just soft and beginning to brown-6 to 8 minutes.
2 Stir in clam juice, water, potatoes, tomatoes, pepper, and bring to a simmer and cook, stirring occasionally until the vegetables are tender-8 to 10 minutes.
3 Stir in clams and juice and simmer until heated through-1 to 2 minutes
Original recipe calls for fennel bulb and white wine. I left them out.
