Description: This is one of my husband's favorites. The chicken meat filling can be served in burrito's or on top of toastadas with "Mary's Guacamole" to top it off.

Ingredients:  Makes 6 servings

Directions:  
First, cook chicken breasts in the microwave for 2 minutes on each side, cool, and dice.
Second, cook soy chorizo in a skillet until browned, add pinto beans, chicken, chicken broth, chopped onion, cumin, chili powder, salt, and simmer uncovered until chicken broth is absorbed.
Spoon meat mixture onto flour tortillas and top with shredded cheddar cheese, fold and serve with salsa or "Mary's Guacamole."
