Ingredients:  Makes 42 servings (42 each)

1-1/2  teaspoons
 
1  teaspoon
 
1/4  teaspoon
 
1/2  cup
 
1/2  cup
 
 
1/2  cup
 
1/2  cup
 
2  tablespoons
 
2  teaspoons
 
1/3  teaspoon
 
1/2  teaspoon

Directions:  
1.) Heat oven to 425 degrees.
2.) Spray 2 sets of 24 mini-muffin cups with vegetable cooking spray
3.) Mix banana and spices. Beat in brown sugar and oil, then slowly beat in eggs.
4.) Whisk flours, cornstarch, baking powder, baking soda, and salt in a medium bowl. Add to banana mixture and beat until just combined.
5.) Divide batter among muffin cups. Batter makes approximately 42 muffins.
6.) Bake until golden and cooked through, about 10 minutes. Let muffins stand a few minutes before turning them out onto a rack to cool.
