Directions:  
Heat pan over medium heat, spray with cooking spray and sautee onions & peppers till soft. Add Entire can of Tomatoes to pan along with (drained) mushrooms, over medium heat, until excess liquid has boiled off. Pull off heat. Wash and DRY spinach, then chop into small pieces. Combine tomatoe mixture, egg whites, milk & spinach well & add spices (Italian seasoning & garlic salt) then pour into sprayed muffin pan. Cook at 350 for approx 35 minutes. Serve alone or sandwiched between bread or English muffin.

º5/8 - Cooked for 30 min, tasted great but a bit watery. Needs more cook time & maybe less wet ingrediant??
