Directions:  
Family Favorite

Saute onion and celery.
Mix a a bowl all the ingredients except 1/2 of the tomato sauce.
Add enough oatmeal to hold the meatloaf together but not make it too dry.
Place and shape in a cast iron skillet or individaul molds.
Poke holes in the top with your finger. Pour tomato sauce over the top making sure you cover the whole meatloaf.
Bake 350 degrees for approx an hour or a little more.
About 15 mins before done cut into slices and return to the oven to
finish cooking.

Ground beef should NOT be pink in the middle.

I appreciate this recipe and I love that you cook it in cast iron. If it's unfinished cast iron, it will increase the iron content of the meatloaf, especially with the tomato sauce.
