Directions:  
Spray a large Coffee Mug or Pyrex Measuring cup w/non stick spray. Measure in wet ingredients: Egg beaters, 1 tsp of Yogurt, 1 tsp vanilla,
1 tsp EVOO. Stir wet ingredients in prepred mug/cup.

Add in dry ingredients: 2 TSBP Flax Meal, 1/2 Scoop Protein Powder, 1 tsp cinnamon, 1/2 tsp baking powder, 1 TBSP Splenda. Stir until all ingredients are wet.

Microwave for 1 minute. If not done, microwave in increments of 10 seconds. When done, dump muffin on a plate to cool.

Mix egg, 1/2 tsp vanilla, 1 tsp Splenda, 1 tsp yogurt, and 1 tsp cinnamon together.

Slice muffin into 4 pieces. Dunk in egg mixture. Cook in prepared pan for 4 minutes on each side.

Top with remaining yogurt, sliced fresh berries (optional), and splenda.
