Description: made with Hodgson Mill Oat Bran Cereal. I substituted egg beaters for 2 eggs or 4 egg whites, and whole wheat flour for unbleached white flour.

Preheat oven to 400 degrees F. and line 12 muffin cups with paper liners.

Blend together dry ingredients and add eggs, chilled applesauce, and canola oil.

Mix until well blended and spoon batter into muffin cups. Let stand for 10 minutes.

Bake 15 minutes at 400 degrees F, or until golden brown.
