Mix together the oats, rosemary, salt, and pepper.
Brush each tenderloin with egg white, and the coat in oat mix. Place on a cookie sheet and bake in a preheated oven at 400 degrees for 30 minutes, or until done.
In a bowl, mix together the ricotta cheese and whole grain mustard. Season with salt and pepper. Serve with chicken tenders.
