Description: Gluten free, sugar free, salt free ... a blank slate for your favorite syrup! You will need a blender to grind rolled oats into flour, and a Belgian waffle iron.

Ingredients:  Makes 4 servings (480 grams)

Directions:  
In a small mixing bowl, whisk 200g oat flour with 1T baking powder.
In a large mixing bowl, melt 4T butter, then whisk in 1t vanilla, 3 eggs, and 300g milk to make a batter.
Vigorously whisk batter for one minute, then slowly add flour mix.

Stir batter until well blended, then scoop up a scant cup. Pour slowly onto preheated waffle iron, careful not to let it pile up or overflow. Wait 30 seconds and then close the cooker. Wait 5 minutes, then use silicon fork and spatula to move waffle to a plate. Repeat 3x to make 4 waffles.

Helpful Hints:
Use a blender on pulse to grind rolled oats into oat flour.
Wipe down your waffle iron before and after each use; don't use soap.
Having all ingredients at room temperature makes a smoother mixture.
This batter separates quickly, so stir well before each waffle.
