Olive Garden Minestrone

1-1/2  cups		Chopped Onion
2/3  cup		Diced Carrot
2  tablespoons		Country Crock
1/3  cup		Garbanzo Beans
1/4  cup		Lentil
1/4  cup		Navy Beans
1/4  cup		Kidney Beans
1/2  cup		Sliced Carrot
1  cup		Chopped Celery
1-1/3  tablespoons		Chopped Parsley
2/3  teaspoon		Fresh Oregano
2/3  teaspoon		Fresh Basil
1-1/3  teaspoons		Low Sodium Soy Sauce
1  tablespoon		Parmesan cheese

Slowly saute finely minced onion, celery and carrot in butter until very
brown. Add peas and beans and about 3 quarts of water. Cook slowly until
beans are almost done (check garbanzos - they take longest) about 2 to 2
1/2 hours. Add the remaining vegetables, and spices and more water if necessary and cook another hour. About 20 minutes before serving time add the macaroni and more water if needed. Ladle into bowls and sprinkle with Parmesan cheese. Pepper to taste.
