Place chicken breasts on a large cutting board and cover with plastic wrap. Flatten breasts with a kitchen mallet to create very thin cutlets. Roll one banana half tightly inside each chicken cutlet. Secure with toothpicks.

2)In a shallow dish, combine egg and milk. In another shallow dish, combine cornmeal, salt, pepper, and herbs.

Dip each rolled-up cutlet in egg mixture, then into cornmeal mixture, coating well. Place on baking sheet with pineapple ring halves. Spray chicken lightly with vegetable cooking spray. Discard any excess egg and cornmeal mixtures.

Bake in preheated oven (350F/180C) for 20 to 30 minutes or until chicken is golden brown, no longer pink inside and has reached an internal temperature of 170F(77C).

Remove toothpicks, cut each cutlet in half diagonally and serve with pineapple on top or on the side.
