Directions:  
Take out eggs and milk 30 minutes in advance so they are at room temperature, if possible.

Bake in lower (large) oven, with rack 2/3 down. Preheat over to 450. Spray muffin pan, including between cups.

Combine ingredients in stand mixer, first mixing eggs and milk, then adding flour, salt and butter (or just whisk). Pour into sprayed muffin tin.

Bake 15 minutes at 450. Turn heat down to 350. Bake 25 minutes more.

Cool five minutes before removing from pan, or they will stick.
