Description: Pork loin and sauteed vegetables in a flour tortilla with shredded cheddar cheese and salsa.

Clean and trim all visible fat from meat.
Wash and cut peppers and onions into strips.
On different cutting board, slice meat into strips.
Saute meat in non-stick skillet for 5 minutes or until meat is no longer pink.
Add vegetables, sprinkle with red pepper and cook an additional 5 minutes or until vegetables are tender.
Place 2 to 3 ounces of meat mixture, 1 tablespoon salsa and 1/2 ounce of cheese in each tortilla.
