Ingredients:  Makes 1 serving

1-1/2  cups
1/8  cup
3  tablespoons
17  grams
1  tablespoon

Sautee Olive Oil and Chopped Onion on med-low (3 on my stove) heat till onions turn slight translucent
Add Garlic and sautee while you chop your peppers.
Add peppers and sauce and mix through, cover and simmer while you chop your tomatoes & portabello
Toss in tomatoes & portabello allow to cook through. Meanwhile cut up your avocado & measure out your feta.
Add spinach last about 1/2 amount at a time. Cook till limp.
Plate and top with avocado & feta.
