Directions:

Saute onion and garlic in olive oil until soft.

Add quinoa, broth, cumin and cayenne. Bring to a boil, cover and simmer 20 minutes or until all liquid is absorbed.

Stir in frozen corn, beans and cilantro. Simmer 5 minutes untill warm.

Add salt and pepper to taste.
