Ingredients:  Makes 1 serving (1 cup)

Directions:

Rinse 1 cup uncooked quinoa for 3 minutes in room temperature water.

Boil 2 cups of water or broth (chicken, beef etc.)

Drain the quinoa and add to the boiling water. You can season if desired but I don't.

Once it returns to a boil, turn heat to low and simmer for 15 - 20 minutes (I do it for 17). This will give you appx 5 servings of the cereal as I make it. Quinoa can also be used as a whole grain substitute for rice.

You can eat quinoa hot or cold. I use cold for this recipe using 1 cup of the cooked quinoa, half a medium apple cut up with skin, a few raisins, some sunflower seeds and cinnamon as desired.

Total Calories - 320 I'm not sure why it shows as significantly less.
