Heat a dry 12-inch heavy skillet over high heat until hot.

while you are heating up the skillet pat the rack of lamb dry and rub the meat all over with salt and pepper.

Add oil to the hot skillet and brown the racks on all sides

Transfer the racks to a small roasting pan

Put the oven rack in the middle position and preheat the oven to 375 degrees F

Stir together garlic, herbs, salt, pepper, and extra virgin olive oil.

Coat meaty parts of lamb with herb mix.

roast 15 minutes

insert a thermometer diagonally into center of meat.

cover loosely with foil and roast about 15 minutes until the center is 120 degrees F.
