Directions:  
slice and salt egg plant and leave to one side
roughly chop all other veg
add oil to a large pan and place over a low heat
add onions to pan and cook for 5 minutes
add tomatoes and zucchini
roughly chop egg plant and add to pot
and around a pint of water some mixed herbs and season
simmer for around 90 minutes
