In a large skillet, cook bacon and onion over medium heat until bacon crisps; drain. Stir in tomatoes, tomato paste, oil, garlic, salt, pepper, and Italian seasoning.

Preheat oven to 375 degrees. Spread half of tomato mix into a 13x9-inch baking dish. Layer with half of the eggplant, zucchini, green pepper, and cheese. Repeat layers. Bake, uncovered, for 50 minutes.
