Ingredients:  Makes 4 servings (4 cups)

Rinse Lentils and set aside

Add water to pot and put in lentils and bring to a boil on med-high heat

Keep checking b/c lentils cook fast, as well as keep stirring from time to time, b/c it may stick, but I reduced the calories from adding any oil.

When lentils are fork ready, add chopped veggies and boullion cube. (You can also add what ever other vegetable you like)

You may want to add some more water but not too much, unless you want the ultimate soupy consistency, me I like it in between.

When lentils are ready, you can eat it as such, or you can transfer it into the blender and puree it...for that restaurant look, feel and taste.
