Directions:

Boil 1/4 c. red quinoa in 3/4 c. water covered for 10 minutes.

Add 1 Tbsp. extra virgin olive oil and 1 tsp. minced garlic to saute pan and cook on medium heat.

Dice 1 roma tomato and add to saute pan and stir with rubber spatula.

Rince and chop two cups of fresh curly kale and add to saute pan and cover with lid. Let kale steam for 5 minutes.

Add quinoa to saute pan and mix.

Divide into two portions and serve.
