Preheat oven to 375 degrees
Place onion, garlic, tarragon and thyme in the cavity of the chicken
Tie down legs and wings
Rub with olive oil, salt and pepper
Place in roasting pan, breast side down
Roast 25 minutes then turn breast side up
Baste with pan juices
Test and cook until themometer inserted in thight at tickest part and touching bone registers 175 degrees
Remove and let rest 10 minutes before removing string and cutting.
