Toss veggies in a large bowl with olive oil, garlic powder, onion salt, and ground black pepper. Spread onto a rimmed baking sheet and roast at 450 degrees, stirring once, for 30 minutes.

Meanwhile, combine broth and water in a small saucepan and bring to a boil. Slowly whisk in cornmeal, adding a dash of ground black pepper. Reduce heat to low, cover, and cook 10-15 minutes, stirring occasionally. Stir in cheese and remove from heat.

Dish polenta onto plate, and serve veggies over the polenta. Enjoy!
